Meat Species Substitution Summary Data ​The Canadian Food Inspection Agency (CFIA) conducts surveillance of raw, ready-to-eat (RTE) and heat-treated non-RTE meat products, to verify the accurate representation of the species declared on the product label and whether species substitution has occurred.
