Meat Species Substitution Summary Data
The Canadian Food Inspection Agency (CFIA) conducts surveillance of raw, ready-to-eat (RTE) and heat-treated non-RTE meat products, to verify the accurate representation of the species declared on the product label and whether species substitution has occurred. Samples were tested using an enzyme-linked immunosorbent assay (ELISA) with antibodies specific to each of the following species: porcine (pork), bovine (beef), poultry (chicken), caprine (goat), ovine (sheep) and equine (horse) to identify the species declared on the product label.
